- Peel and slice the aubergine.
- Brush oil on both sides of each aubergine slice.
Once prepared, place onto a pan and fry until brown on both sides. Once ready, set aside.
Preheat the pan with oil and add the minced pork, once brown add the sauce packet.
Mix altogether then pour in 1-2 tablespoons of water. Then remove from heat and place into a serving dish, with a sprinkle of spring onion on top.
Serve the minced pork on the side or on top of the aubergine.
